Make ultra-crispy zucchini fries in your air fryer with a savory breadcrumb and parmesan coating. Serve with your favorite dipping sauce for a healthy, quick appetizer.

  • 2 medium zucchinis, trimmed
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Instructions

  1. Cut zucchinis into 1/2-inch thick sticks.
  2. Set up three shallow dishes. Place flour in the first, beaten eggs in the second, and a mixture of panko, Parmesan, garlic powder, salt, and pepper in the third.
  3. Dredge each zucchini stick first in flour, then dip in egg, and finally coat thoroughly with the breadcrumb mixture.
  4. Arrange zucchini fries in a single layer in the air fryer basket. Do not overcrowd.
  5. Lightly spray the fries with cooking spray.
  6. Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  7. Cook in batches if necessary to ensure even crisping.
  8. Serve immediately with your favorite dipping sauce.

Notes

  • For extra crispiness, you can double-coat the zucchini sticks by dipping them in egg and breadcrumbs again.
  • Ensure the zucchini sticks are dry before breading for better adhesion.
