Make homemade Almond Joy Truffles that taste just like the candy bar. This simple, no-bake recipe uses only four ingredients for a quick, fudgy coconut and almond treat covered in chocolate.

  • 2 cups unsweetened shredded coconut
  • 1/2 cup almond butter
  • 3 tablespoons maple syrup
  • 1 cup dark chocolate chips
  • 1/2 cup whole almonds (for topping)

Instructions

  1. In a medium bowl, combine the shredded coconut, almond butter, and maple syrup. Mix until the ingredients form a sticky dough.
  2. Roll the coconut mixture into small balls, about 1 inch in diameter. Press one whole almond into the top center of each ball.
  3. Place the formed balls onto a baking sheet lined with parchment paper. Freeze for 15 minutes to firm up.
  4. Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  5. Dip each frozen coconut ball into the melted chocolate, ensuring it is fully coated. Let excess chocolate drip off.
  6. Return the coated truffles to the parchment-lined sheet. If desired, press a small piece of almond onto the top of each truffle before the chocolate sets.
  7. Refrigerate the Almond Joy Truffles for at least 30 minutes, or until the chocolate coating is firm.

Notes

  • For a smoother coating, add 1 teaspoon of coconut oil to the chocolate chips before melting.
  • If you prefer a sweeter center, substitute the maple syrup with powdered sugar, adjusting the amount until the mixture holds together.
