1.5 lbs boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp dried oregano
0.5 tsp garlic powder
0.5 tsp salt
0.25 tsp black pepper
4 oz feta cheese, crumbled
1 lemon, juiced
3 tbsp olive oil
1 tsp Dijon mustard
1 clove garlic, minced
0.25 tsp salt
0.125 tsp black pepper
2 tbsp fresh parsley, chopped
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, mix 1 tbsp olive oil, oregano, garlic powder, salt, and pepper.
Place chicken breasts in a baking dish and coat them evenly with the olive oil mixture.
Bake for 20 minutes.
While the chicken bakes, prepare the vinaigrette. In a medium bowl, whisk together lemon juice, 3 tbsp olive oil, Dijon mustard, minced garlic, salt, and pepper until well combined.
Remove the chicken from the oven. Sprinkle the crumbled feta cheese over the chicken.
Return the dish to the oven and bake for another 5-7 minutes, or until the feta is lightly golden and crispy and the chicken is cooked through (internal temperature reaches 165°F or 74°C).
Remove from oven. Drizzle the zesty vinaigrette over the chicken and feta.
Garnish with fresh chopped parsley before serving.
Notes
For an extra zesty flavor, add a pinch of lemon zest to the vinaigrette.
