Easy Beef Enchilada Casserole

A simple, layered beef and tortilla casserole baked in a rich enchilada sauce and topped with melted cheese. This family-friendly dish is perfect for busy weeknights and makes great leftovers.

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 1 (4 ounce) can diced green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 corn tortillas, cut into quarters
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 (10 ounce) can enchilada sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
  3. Stir in the minced garlic, tomato sauce, diced green chilies, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  4. Spread a thin layer of the beef mixture on the bottom of a 9×13 inch baking dish.
  5. Arrange a layer of tortilla quarters over the beef mixture.
  6. Spoon about half of the remaining beef mixture over the tortillas.
  7. Sprinkle with half of the shredded cheddar and Monterey Jack cheeses.
  8. Repeat the layers: tortillas, remaining beef mixture, and remaining cheeses.
  9. Pour the enchilada sauce evenly over the top of the casserole.
  10. Cover the baking dish with aluminum foil.
  11. Bake for 25 minutes.
  12. Remove the foil and bake for another 10-15 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  13. Let stand for 5-10 minutes before serving.

Notes

  • For a spicier casserole, add a pinch of cayenne pepper to the beef mixture.
  • You can substitute ground turkey or chicken for the ground beef.
  • This casserole is excellent for meal prep. Let it cool completely before covering and refrigerating. Reheat individual portions in the microwave or oven.
