Learn how to make the classic Peach Bellini cocktail using fresh peach puree and chilled Prosecco. This simple, elegant Italian sparkling drink is perfect for brunch or any celebration.

  • 3 oz chilled Prosecco or sparkling wine
  • 3 oz fresh peach puree
  • Optional: 1/4 oz peach schnapps or brandy for extra flavor

Instructions

  1. Chill your Prosecco or sparkling wine thoroughly before starting.
  2. Prepare the peach puree by blending ripe peaches until smooth. Strain the puree if you prefer a smoother texture, removing any solids.
  3. Chill your champagne flutes.
  4. Pour the peach puree into the bottom of each chilled flute.
  5. Slowly top the puree with the chilled Prosecco. Pour gently down the side of the glass to maintain carbonation.
  6. If using, add a small splash of peach schnapps or brandy.
  7. Serve immediately. This is an easy two ingredient cocktail if you skip the optional liqueur.
