Ingredients
Scale
3 oz chilled Prosecco or sparkling wine
3 oz fresh peach puree
Optional: 1/4 oz peach schnapps or brandy for extra flavor
Instructions
Chill your Prosecco or sparkling wine thoroughly before starting.
Prepare the peach puree by blending ripe peaches until smooth. Strain the puree if you prefer a smoother texture, removing any solids.
Chill your champagne flutes.
Pour the peach puree into the bottom of each chilled flute.
Slowly top the puree with the chilled Prosecco. Pour gently down the side of the glass to maintain carbonation.
If using, add a small splash of peach schnapps or brandy.
Serve immediately. This is an easy two ingredient cocktail if you skip the optional liqueur.
Notes
For a festive twist, try a Strawberry Bellini by substituting strawberry puree for peach puree.
To make a Frozen Peach Bellini, blend the peach puree with ice before adding the sparkling wine.
For a low-alcohol option, use sparkling white grape juice instead of Prosecco.
This recipe works well as a base for a Holiday Champagne Punch when scaled up.
