A creamy and satisfying pasta salad featuring crispy bacon, juicy tomatoes, and a tangy dressing, perfect for potlucks, quick dinners, or meal prep.

Ingredients

  • 1 pound rotini pasta
  • 1 pound bacon, cooked and crumbled
  • 1 pint cherry tomatoes, halved
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook rotini pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked pasta, crumbled bacon, and halved cherry tomatoes.
  3. In a separate small bowl, whisk together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
  4. Pour dressing over pasta mixture and toss to coat evenly.
  5. Stir in fresh parsley.
  6. Chill for at least 30 minutes before serving to allow flavors to meld.

Notes

  • For best results, make this salad a few hours ahead of time.
  • To prevent sogginess, store dressing separately if making more than a day in advance.
  • Add extra chopped lettuce or green onions for added freshness.
