1 cup (2 sticks) unsalted butter
1 cup granulated sugar, divided
1/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
6 cups sliced ripe peaches (about 6–8 medium peaches)
2 tablespoons lemon juice
Instructions
Preheat your oven to 375°F (190°C).
In a medium saucepan, melt the butter over medium heat. Continue cooking, swirling the pan occasionally, until the butter turns a deep golden brown and smells nutty. This is your brown butter. Remove from heat immediately.
In a large bowl, whisk together 1/2 cup of the granulated sugar, flour, baking powder, and salt.
In a separate bowl, whisk together the milk, vanilla extract, cinnamon, and nutmeg.
Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
Pour the brown butter into the batter and stir gently until incorporated.
In a separate bowl, toss the sliced peaches with the remaining 1/2 cup of granulated sugar and lemon juice.
Pour the peach mixture into a 9×13 inch baking dish or a 10-inch cast iron skillet.
Carefully pour the batter evenly over the peaches.
Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
Let cool slightly before serving warm, ideally with a scoop of vanilla ice cream.
Notes
For best results, use ripe, juicy peaches.
You can adjust the spices to your preference.
