Make chewy, chocolatey cookies quickly using boxed brownie mix. This recipe requires minimal ingredients and steps, perfect for last-minute treats or parties.

Ingredients

Scale
  • 1 box (18.3 oz) brownie mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, combine the brownie mix, eggs, vegetable oil, and vanilla extract.
  3. Stir until the ingredients are just combined. Do not overmix.
  4. If using, fold in the chocolate chips.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  6. Bake for 9-12 minutes, or until the edges are set and the centers are still slightly soft.
  7. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra fudgy cookies, use only 1 egg.
  • Add a sprinkle of sea salt on top before baking for a salted caramel flavor.
  • These cookies are great for a quick dessert option, similar to what you might find from meal planning services that offer dessert kits.
