A creamy, spicy Cajun chicken pasta made in one pot, perfect for a quick weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 8 ounces uncooked fettuccine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add chicken and season with Cajun seasoning, salt, and pepper. Cook until browned on all sides.
  3. Add onion and cook until softened, about 5 minutes.
  4. Stir in garlic and cook for 1 minute more until fragrant.
  5. Pour in diced tomatoes and chicken broth. Bring to a simmer.
  6. Stir in heavy cream and fettuccine. Cover and cook for 10-12 minutes, or until pasta is al dente, stirring occasionally.
  7. Stir in Parmesan cheese until melted and sauce is creamy.
  8. Garnish with fresh parsley before serving.

Notes

  • For a spicier dish, add a pinch of cayenne pepper.
  • You can substitute chicken breasts for thighs if preferred.
  • Ensure all pasta is submerged in liquid for even cooking.
