Make these irresistible Caramel Ritz Cracker Christmas Cookies for a perfect sweet and salty holiday treat. This recipe is quick to assemble and ideal for cookie exchanges or festive platters.

Ingredients

Scale
  • 48 Ritz crackers
  • 24 soft caramel candies, unwrapped
  • 2 tablespoons heavy cream or milk
  • 1½ cups milk chocolate or semi-sweet chocolate chips
  • Holiday sprinkles, crushed candy canes, or coarse sea salt (optional toppings)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Arrange the 48 Ritz crackers in a single layer on the prepared baking sheet.
  3. Place one unwrapped caramel candy on top of each cracker.
  4. Bake for 4 to 5 minutes, or until the caramel is soft and melted. Watch closely to prevent burning.
  5. Remove the sheet from the oven. Gently press down on the melted caramel with the back of a spoon to flatten it slightly.
  6. In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth and fully melted. This creates your chocolate drizzle.
  7. Drizzle the melted chocolate mixture over the caramel-topped crackers.
  8. Immediately sprinkle with your choice of holiday sprinkles, crushed candy canes, or sea salt, if using.
  9. Allow the cookies to cool completely at room temperature until the chocolate and caramel have set firm, about 30 minutes.
  10. Once set, separate the cookies and store them in an airtight container.

Notes

  • For a faster set time, you can place the baking sheet in the refrigerator for 15 minutes after drizzling the chocolate.
  • If you prefer a thicker caramel layer, use two small caramels per cracker or increase the baking time slightly.
  • These treats are excellent for cookie exchange favorites and make great edible gifts in a jar when layered with parchment paper.
