2 cups cooked, shredded chicken
2 cups fresh or frozen broccoli florets
1 can (10.5 ounces) condensed cream of chicken soup
1/2 cup mayonnaise
1 teaspoon curry powder (optional, for warmth)
1/4 cup dry sherry or chicken broth
1 cup shredded sharp cheddar cheese, divided
1/2 cup crushed butter crackers or breadcrumbs
2 tablespoons melted butter
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
If using fresh broccoli, steam or blanch the florets until they are tender-crisp. Drain them well. If using frozen, thaw and drain thoroughly.
In a large bowl, combine the cream of chicken soup, mayonnaise, curry powder (if using), and sherry or broth. Mix until the sauce is smooth.
Stir in the shredded chicken, cooked broccoli, and half (1/2 cup) of the shredded cheddar cheese into the sauce mixture. Mix gently to coat everything evenly.
