A zesty and healthy seafood dinner with a spicy lime marinade, perfect for summer meals.

Ingredients

  • 2 mahi-mahi fillets (6 oz each)
  • 2 tbsp olive oil
  • 1 lime (juiced and zested)
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup broccoli florets (optional for side)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lime juice, lime zest, chili powder, garlic powder, salt, and black pepper.
  3. Coat mahi-mahi fillets with the marinade and let sit for 10 minutes.
  4. Heat a skillet over medium-high heat. Sear fillets for 2-3 minutes per side.
  5. Transfer skillet to the oven and bake for 5-7 minutes, until fish flakes easily.
  6. If using broccoli, toss with olive oil and salt, then roast alongside fish for 10 minutes.

Notes

  • For extra spice, add a pinch of cayenne pepper.
  • Serve with rice or a fresh salad.
