Make this easy Cinnamon Roll French Toast Casserole ahead of time for a decadent, gooey breakfast or brunch that requires minimal morning effort. This recipe combines the comfort of French toast with the sweet swirl of cinnamon rolls.

  • 1 (13-ounce) package refrigerated cinnamon rolls (about 8 rolls)
  • 6 large eggs
  • 1 cup milk
  • 1/2 cup half and half
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 3 tablespoons salted butter, melted
  • Cream cheese icing packet (from cinnamon roll container)

Instructions

  1. Lightly grease a 9×13 inch baking dish.
  2. Cut each cinnamon roll into quarters. Arrange the pieces evenly in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, half and half, vanilla extract, and ground cinnamon until fully combined.
  4. In a separate small bowl, whisk together the granulated sugar and brown sugar. Sprinkle this sugar mixture evenly over the cinnamon roll pieces in the baking dish.
  5. Slowly pour the egg custard mixture over the cinnamon roll pieces, ensuring all pieces are well saturated. Gently press down on the rolls to help them absorb the liquid.
  6. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  7. When ready to bake, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Remove the plastic wrap.
  8. Drizzle the melted butter evenly over the top of the casserole.
  9. Bake for 35 to 45 minutes, or until the casserole is puffed, golden brown, and the center is set.
  10. Remove from the oven and let it cool for 10 minutes.
  11. Prepare the cream cheese icing according to package directions. Drizzle the warm icing over the baked casserole before serving.

Notes

  • For an extra rich flavor, substitute brioche bread cubes for store-bought cinnamon rolls if you prefer a scratch-made version.
  • If you skip the overnight soak, let the assembled casserole sit at room temperature for 30 minutes before baking.
