A comforting, creamy soup with tender chicken and pearl couscous, perfect for cold days or when you need a quick meal.

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 cup pearl (Israeli) couscous
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic and thyme, cooking for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add pearl couscous and simmer for 8-10 minutes until tender.
  6. Stir in shredded chicken and heavy cream.
  7. Season with salt and pepper. Simmer for 5 more minutes.
  8. Serve hot.

  • Use leftover rotisserie chicken for a quick meal.
  • Freeze leftovers in airtight containers for up to 3 months.
