  • 4 boneless pork chops (about 1 inch thick)
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried thyme

Instructions

  1. Pat the pork chops dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear pork chops for 1-2 minutes per side until browned.
  3. Place the sliced onion in the bottom of your slow cooker. Add the seared pork chops on top of the onions.
  4. In a small bowl, whisk together chicken broth, heavy cream, flour, salt, pepper, and thyme until smooth. Pour this mixture over the pork chops.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the pork chops are tender.
  6. Remove pork chops from the slow cooker. If the gravy is too thin, whisk in a little more flour or cornstarch slurry and cook on high for 15-20 minutes until thickened.
  7. Serve the pork chops with the creamy gravy over mashed potatoes or rice.
