A creamy, cheesy slow cooker potato soup perfect for a comforting and easy meal.

Ingredients

  • 4 cups diced russet potatoes
  • 1 cup diced yellow onion
  • 2 cloves minced garlic
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon paprika
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh chives, for garnish

Instructions

  1. Place diced potatoes, onion, garlic, chicken broth, salt, pepper, thyme, and paprika in your slow cooker.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender.
  3. Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is creamy.
  4. Serve hot, topped with crumbled bacon and fresh chives.

Notes

  • For a thicker soup, mash some of the potatoes against the side of the slow cooker before adding the cream and cheese.
  • You can also add other toppings like sour cream or green onions.
  • This soup is a great option for busy weeknights.
