- 4 cups diced russet potatoes
- 1 cup diced yellow onion
- 2 cloves minced garlic
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon paprika
- 4 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh chives, for garnish
- Place diced potatoes, onion, garlic, chicken broth, salt, pepper, thyme, and paprika in your slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender.
- Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is creamy.

Notes
- For a thicker soup, mash some of the potatoes against the side of the slow cooker before adding the cream and cheese.
