Ingredients
Scale
2 pounds beef chuck roast, cut into 1-inch cubes
1.5 pounds baby red potatoes, quartered
1 cup beef broth
1/2 cup unsalted butter, melted
4 cloves garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons cornstarch (optional, for thickening)
2 tablespoons water (optional, for thickening)
Instructions
Place the beef cubes and quartered potatoes into your slow cooker.
In a medium bowl, whisk together the beef broth, melted butter, minced garlic, rosemary, thyme, salt, and pepper.
Pour the liquid mixture over the beef and potatoes in the slow cooker.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
If you prefer a thicker sauce, whisk together the cornstarch and water in a small bowl. Stir this mixture into the slow cooker during the last 30 minutes of cooking.
Serve hot.
Notes
For an extra layer of flavor, you can sear the beef cubes before adding them to the slow cooker.
Garnish with fresh parsley before serving for a touch of color.
