2 lbs boneless, skinless chicken breasts or thighs
1 cup low-sodium soy sauce
1/2 cup packed brown sugar
1/4 cup rice vinegar
2 tablespoons fresh grated ginger
4 cloves garlic, minced
1 teaspoon sesame oil
1/4 cup cornstarch
1/4 cup cold water

Instructions
Place the chicken breasts or thighs into the bottom of your slow cooker.
In a separate bowl, whisk together the soy sauce, brown sugar, rice vinegar, grated ginger, minced garlic, and sesame oil until the sugar dissolves.
Pour the teriyaki sauce mixture evenly over the chicken in the slow cooker.
Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is tender and easily shreds.
Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce in the slow cooker.
In a small bowl, whisk together the cornstarch and cold water to create a slurry. Stir this slurry into the sauce in the slow cooker.
Cover and cook on HIGH for an additional 15 to 20 minutes, stirring occasionally, until the sauce thickens into a sticky teriyaki glaze.
Serve the sticky teriyaki chicken over steamed rice or with your favorite vegetables. Garnish with sesame seeds and green onions before serving.
Notes
For a thicker glaze without the cornstarch slurry, remove the chicken halfway through cooking and shred it. Let the remaining liquid simmer on high for 30 minutes uncovered before returning the chicken.
This recipe works well for meal prep; store leftovers in airtight containers for up to four days.
If you prefer a less sweet flavor, reduce the brown sugar by 2 tablespoons.
