Ingredients
Scale
1 pound raw shrimp, peeled and deveined
8 slices white bread, crusts removed
2 tablespoons mayonnaise
1 tablespoon sesame oil
1 teaspoon soy sauce
1 teaspoon minced garlic
1/2 teaspoon ground white pepper
1 large egg white
1 tablespoon chopped fresh scallions
1 tablespoon sesame seeds (for topping)
Cooking spray or melted butter for brushing
Instructions
Preheat your oven to 400°F (200°C). Lightly spray a baking sheet with cooking spray or brush with melted butter.
Prepare the shrimp paste: Place the shrimp, mayonnaise, sesame oil, soy sauce, minced garlic, white pepper, and egg white into a food processor. Pulse until the mixture forms a relatively smooth paste. Do not over-process.
Stir in the chopped scallions by hand.
Trim the crusts from the bread slices. Cut each slice of bread in half diagonally to create triangles.
Spread a generous, even layer of the shrimp mixture onto one side of each bread triangle. The layer should be thick enough to cover the bread completely.
Place the bread triangles, shrimp-side up, onto the prepared baking sheet.
Lightly brush the edges of the bread with a little melted butter or cooking spray for extra crispness. Sprinkle the tops evenly with sesame seeds.
Bake for 12 to 15 minutes, or until the shrimp topping is firm and cooked through, and the bread edges are golden brown.
Serve your crispy shrimp toast immediately with sweet chili sauce for dipping.
Notes
For an air fryer shrimp toast variation, cook at 375°F (190°C) for 8 to 10 minutes, checking halfway through.
If you prefer a richer flavor, substitute the egg white with 1 tablespoon of cream cheese in the shrimp mixture.
To achieve a truly golden brown finish, you can briefly place the toast under the broiler for the last minute, watching closely to prevent burning.
