  • 1 cup shredded Mexican blend cheese
  • 1/2 cup frozen corn, thawed (optional)

Instructions

  1. Place the softened cream cheese and sour cream into a medium mixing bowl.
  2. Use an electric mixer or a sturdy whisk to beat the cream cheese and sour cream together until the mixture is completely smooth and creamy. Scrape down the sides of the bowl as needed.
  3. Add the entire packet of taco seasoning mix to the cream cheese base. Mix until the seasoning is fully incorporated and the mixture is uniformly colored.
  4. Gently fold in the well-drained Rotel tomatoes and the thawed corn, if you are using it. Mix just until combined; avoid overmixing.
  5. Fold in half of the shredded Mexican blend cheese.
  6. Transfer the dip mixture to your serving dish. Top evenly with the remaining shredded cheese.
