  • 1 pound breakfast sausage, cooked and drained
  • 1 (32 ounce) bag frozen shredded hash browns, thawed
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 large eggs
  • 1 cup whole milk
  • 1 cup cottage cheese (small curd)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Grease a 9×13 inch baking dish. Spread the thawed hash browns evenly over the bottom of the dish.
  2. Sprinkle the cooked and drained sausage over the hash browns. Top with the shredded cheddar and Monterey Jack cheeses.
  3. In a large bowl, whisk together the eggs, milk, cottage cheese, salt, pepper, and garlic powder until fully combined and slightly frothy. This creates a high protein base.
  4. Pour the egg mixture evenly over the sausage and cheese layers in the baking dish. Gently press down on the ingredients to submerge them slightly in the egg mixture.
  5. Cover the dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the hash browns to absorb moisture.
  6. When ready to bake, preheat your oven to 375 degrees Fahrenheit. Remove the plastic wrap or foil.
