Make this creamy, cheesy chicken cobbler casserole using a simple biscuit topping inspired by Cheddar Bay flavors. It is a satisfying, one-dish comfort meal perfect for busy weeknights.

  • 1 cup chicken broth

  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 package (10 ounces) dry biscuit mix (like a copycat Cheddar Bay mix)
  • Ingredients required by biscuit mix package (usually milk and melted butter)
  • 1/2 cup shredded sharp cheddar cheese (for topping)
  • 2 tablespoons melted butter (for brushing topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, cream of celery soup, chicken broth, sour cream, frozen vegetables, garlic powder, onion powder, pepper, and salt. Mix until all ingredients are fully incorporated.
  3. Pour the chicken mixture evenly into the prepared baking dish.
  4. Prepare the biscuit topping according to the package directions, incorporating the required milk and melted butter. Stir in the 1/2 cup of shredded cheddar cheese into the biscuit dough.
  5. Drop spoonfuls of the biscuit dough evenly over the chicken mixture, leaving small gaps between biscuits.
  6. Brush the tops of the biscuits lightly with the 2 tablespoons of melted butter.
  7. Bake for 25 to 30 minutes, or until the biscuits are golden brown and cooked through and the filling is bubbling hot.
  8. Let the chicken cobbler rest for 5 minutes before you serve it.
