1 cup all-purpose flour
1 cup granulated sugar, divided
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/2 cup (1 stick) unsalted butter, melted
1 teaspoon vanilla extract
4 cups sliced fresh or frozen peaches (about 6–8 medium peaches)
1 tablespoon lemon juice
1 teaspoon ground cinnamon
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, whisk together the flour, 1/2 cup of the granulated sugar, baking powder, and salt.
Add the milk, melted butter, and vanilla extract to the dry ingredients. Stir until just combined; do not overmix. The batter will be thick.
In a separate bowl, gently toss the sliced peaches with the remaining 1/2 cup granulated sugar, lemon juice, and cinnamon.
Pour the peach mixture into an 8×8 inch baking dish or a similar-sized oven-safe skillet.
Spoon the batter evenly over the peaches.
Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly.
Let the cobbler cool for at least 10 minutes before serving.

If using frozen peaches, do not thaw them completely before using.
