  • 2 large sweet potatoes, peeled and diced into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Optional Glaze: 1 tablespoon maple syrup or honey

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
  2. Place the diced sweet potatoes in a large bowl. Drizzle with olive oil.
  3. Add the salt, pepper, garlic powder, and paprika to the bowl. Toss everything together until the sweet potatoes are evenly coated with oil and spices.
  4. Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure crispiness.
  5. Roast for 20 minutes.
  6. If using the optional glaze, remove the pan from the oven, drizzle with maple syrup or honey, and gently toss the potatoes.
  7. Return the pan to the oven and roast for another 10 to 15 minutes, or until the sweet potatoes are tender when pierced with a fork and the edges are caramelized and slightly crispy.
  8. Remove from the oven and serve immediately as a best side dish.

Notes

  • For extra crispy sweet potatoes, toss the potatoes with 1 teaspoon of cornstarch along with the oil and spices before roasting.
  • If you prefer a sweeter profile, use brown sugar instead of maple syrup for the glaze.
