  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or an 8×8 inch square pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients. Mix with a fork or pastry blender until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the eggs, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 30-35 minutes for a round pan, or 35-40 minutes for a square pan, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
