Ingredients

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the steak cubes dry with paper towels. Season with salt and pepper.
  2. Heat olive oil in a cast iron skillet over medium-high heat until shimmering.
  3. Add steak cubes in a single layer, ensuring not to overcrowd the pan. Sear for 1-2 minutes per side until browned. Work in batches if necessary.
  4. Reduce heat to medium. Add butter and minced garlic to the skillet.
  5. As the butter melts, tilt the pan and spoon the garlic butter over the steak cubes for 1-2 minutes, until steak reaches your desired doneness.
  6. Remove steak from skillet and toss with fresh parsley.
