Ingredients
Scale
1 tablespoon olive oil
1 pound ground turkey
1 medium onion, chopped
2 cloves garlic, minced
2 medium zucchinis, diced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chicken broth
Optional: grated Parmesan cheese for serving
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add ground turkey and cook, breaking it up with a spoon, until browned. Drain excess fat.
Add chopped onion to the skillet and cook until softened, about 5 minutes.
Stir in minced garlic and cook for 1 minute more until fragrant.
Add diced zucchini, Italian seasoning, salt, and pepper. Cook, stirring occasionally, until zucchini is tender-crisp, about 5-7 minutes. Avoid overcooking to prevent sogginess.
Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1-2 minutes until slightly reduced.
Serve hot, topped with Parmesan cheese if desired.
Notes
For meal prep, let the skillet cool completely before storing in airtight containers in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
To keep zucchini from getting soggy, dice it into uniform pieces and cook it until it’s just tender, not mushy.
This recipe is a great base; feel free to add other vegetables like bell peppers or mushrooms.
Consider this a healthy alternative to some meal planning services.
