A quick and healthy one-pan dinner featuring ground turkey and zucchini, perfect for a weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchinis, diced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • Optional: grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain excess fat.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Add diced zucchini, Italian seasoning, salt, and pepper. Cook, stirring occasionally, until zucchini is tender-crisp, about 5-7 minutes. Avoid overcooking to prevent sogginess.
  6. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1-2 minutes until slightly reduced.
  7. Serve hot, topped with Parmesan cheese if desired.
