A moist and simple banana bread sweetened with honey and vanilla, perfect for a wholesome breakfast or snack. This recipe is designed for easy, one-bowl preparation and yields slices that freeze well.

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup unsalted butter, softened
  • ¾ cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • ¼ cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a separate bowl, cream together the softened butter and honey until smooth.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Add the mashed bananas and milk to the wet ingredients and mix until combined.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For best results, use very ripe bananas.
  • This bread freezes well. Wrap cooled slices tightly in plastic wrap and then aluminum foil.
  • You can add chopped nuts or chocolate chips to the batter for extra flavor and texture.
