Classic Meatloaf with Tomato Glaze

A moist, oven-baked meatloaf with a sweet and tangy tomato glaze, perfect for a weeknight family dinner.

Ingredients

  • 2 pounds ground beef (80/20)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, milk, chopped onion, egg, salt, and pepper. Mix gently until just combined. Do not overmix.
  3. Shape the mixture into a loaf and place it in a baking dish.
  4. In a small bowl, whisk together ketchup, brown sugar, and Worcestershire sauce for the glaze.
  5. Spread half of the glaze over the top of the meatloaf.
  6. Bake for 45 minutes.
  7. Remove the meatloaf from the oven, spread the remaining glaze over the top, and bake for another 15 minutes, or until the internal temperature reaches 160°F (71°C).
  8. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For an extra moist meatloaf, you can add 1/4 cup of sour cream to the meat mixture.
  • If you don’t have Worcestershire sauce, you can substitute with soy sauce.
  • This meatloaf pairs well with mashed potatoes and green beans.
