  • 1 whole chicken (34 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 lemon, quartered
  • 1 onion, quartered
  • 4 cloves garlic, smashed

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Remove giblets from the chicken cavity and pat the chicken dry with paper towels.
  3. In a small bowl, mix together olive oil, salt, pepper, paprika, garlic powder, onion powder, thyme, and rosemary.
  4. Rub the spice mixture all over the chicken, ensuring it is evenly coated.
  5. Place the lemon quarters, onion quarters, and smashed garlic cloves inside the chicken cavity.
  6. Tie the chicken legs together with kitchen twine if desired for a neater presentation.
  7. Place the chicken in a roasting pan or on a rack in a baking sheet.
  8. Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh, avoiding the bone. The skin should be golden brown and crispy.
  9. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  10. To make pan gravy: Pour the pan drippings into a saucepan. Skim off excess fat. Whisk in 2 tablespoons of flour and cook for 1 minute. Gradually whisk in 2 cups of chicken broth and bring to a simmer, stirring until thickened. Season with salt and pepper to taste.

  • For extra crispy skin, you can leave the chicken uncovered in the refrigerator for a few hours before roasting.
