- 1.5 lbs salmon fillet
- 1/2 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, thinly sliced
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat the salmon fillet dry with paper towels. Place it on the prepared baking sheet.
- In a small bowl, combine the Parmesan cheese, panko breadcrumbs, olive oil, garlic powder, salt, and pepper. Mix until well combined.
- Press the Parmesan mixture evenly over the top of the salmon fillet.
- Arrange the lemon slices around and on top of the salmon.
- Bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown and crispy.
- Serve immediately.
Notes
- For extra flavor, you can add a pinch of dried dill or parsley to the Parmesan mixture.
- If you don’t have panko breadcrumbs, regular breadcrumbs can be used, but the crust may not be as crispy.
- This recipe is a great option for meal planning, and leftovers can be enjoyed cold or reheated.
