Ingredients
Scale
1/2 cup (115g) unsalted butter, melted
1 cup (200g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup (40g) unsweetened cocoa powder
1/2 cup (65g) all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup (120g) creamy peanut butter
1/4 cup (50g) granulated sugar (for peanut butter mixture)
1 large egg (for peanut butter mixture)
1/4 cup (60g) creamy peanut butter (for peanut butter mixture)
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a medium bowl, whisk together the melted butter and 1 cup of sugar until combined.
Beat in the 2 eggs one at a time, then stir in the vanilla extract.
In a separate small bowl, whisk together the cocoa powder, flour, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Pour the brownie batter into the prepared pan and spread evenly.
Prepare the peanut butter swirl mixture: In a small bowl, combine the 1/4 cup sugar, 1 egg, and 1/4 cup peanut butter. Mix until smooth.
Drop spoonfuls of the peanut butter mixture over the brownie batter.
Use a knife or skewer to gently swirl the peanut butter mixture into the chocolate batter to create a marbled effect. Do not over-swirl; you want distinct ribbons of peanut butter.
Bake for 25 to 30 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs attached, indicating a fudgy texture.
Let the brownies cool completely in the pan before lifting them out using the parchment overhang. Cut into squares.
Notes
For the fudgiest results, avoid baking past the point where a toothpick comes out with moist crumbs.
If your peanut butter is very stiff, microwave it for 10 seconds to make swirling easier.
Chill the brownies for at least one hour before cutting for clean slices.
