This recipe delivers a remarkably juicy and tender pork tenderloin using a simple oven-baking method with a flavorful balsamic glaze. It is an easy weeknight pork tenderloin dinner that impresses guests.

Ingredients

Scale
  • 1 pork tenderloin (about 1 to 1.5 lbs)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
  2. Pat the pork tenderloin dry with paper towels. This step helps achieve a better sear and crust.
  3. In a small bowl, mix the salt, pepper, garlic powder, and thyme to create the spice rub. Rub this mixture evenly over the entire surface of the pork tenderloin.
  4. In a separate small bowl, whisk together the balsamic vinegar, honey, soy sauce, and Dijon mustard to make the glaze.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the pork tenderloin on all sides until it develops a golden-brown crust, about 2 minutes per side.
  6. Brush half of the balsamic glaze mixture over the seared pork tenderloin.
  7. Transfer the skillet to the preheated oven. Roast for 15 to 20 minutes, or until an instant-read thermometer inserted into the thickest part reads 145°F (63°C). This ensures you get juicy pork tenderloin baking results.
  8. Remove the pork from the oven. Brush the remaining glaze over the top. Tent the tenderloin loosely with foil and let it rest for 5 to 10 minutes before slicing. Resting is key for tender pork loin cooking.
  9. Slice the pork tenderloin into 1/2-inch thick medallions and serve immediately.

Notes

  • For an even quicker meal, marinate the pork tenderloin in the glaze mixture for 30 minutes before searing.
  • If you prefer grilling pork tenderloin, sear it over direct heat and then move it to indirect heat to finish cooking after applying the glaze.
  • This recipe is a great base for a healthy pork tenderloin dish; reduce the honey slightly if you prefer less sweetness.
