  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup hot honey, plus more for drizzling
  • 1/4 cup shelled pistachios, roughly chopped
  • Crusty bread, crackers, or fresh vegetables for serving

Instructions

  1. Place the drained ricotta cheese, 2 tablespoons of olive oil, lemon juice, salt, and pepper into a food processor.
  2. Process the mixture for 2 to 3 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth, light, and airy.
  3. Transfer the whipped ricotta to a shallow serving bowl. Use the back of a spoon to create swirls on the surface.
  4. Drizzle the top generously with the hot honey.
  5. Sprinkle the chopped pistachios evenly over the dip.
  6. Drizzle a small amount of additional olive oil over the top for shine.
  7. Serve immediately with your choice of bread, crackers, or fresh vegetables.
