  • 2 tbsp soy sauce

  • 1 tsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1.5 cups jasmine rice
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup water
  • 1/2 tsp salt
  • 1/4 cup chopped fresh cilantro, for garnish
  • 1 tbsp sesame seeds, for garnish

Instructions

  1. Cook the jasmine rice: Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the liquid is absorbed and the rice is tender. Let stand, covered, for 5 minutes before fluffing with a fork.
  2. Prepare the chicken: While the rice cooks, pat the chicken pieces dry with paper towels.
  3. Make the sauce: In a small bowl, whisk together the maple syrup, sriracha, soy sauce, rice vinegar, grated ginger, and minced garlic.
  4. Cook the chicken: Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
  5. Glaze the chicken: Pour the prepared sauce over the chicken in the skillet. Bring to a simmer and cook, stirring occasionally, for 5-7 minutes, or until the sauce has thickened and coats the chicken.
  6. Serve: Spoon the coconut rice onto plates. Top with the spicy maple chicken. Garnish with fresh cilantro and sesame seeds.
