One-Skillet Steak Bites and Potatoes

A quick and easy 30-minute dinner featuring tender steak bites and crispy potatoes cooked in a single cast-iron skillet with garlic herb butter.

Ingredients

  • 1.5 pounds sirloin steak, cut into 1-inch cubes
  • 1.5 pounds baby potatoes, halved or quartered if large
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Pat the steak cubes dry with paper towels and season with salt and pepper.
  2. In a large bowl, toss the potatoes with 1 tablespoon of olive oil, salt, and pepper.
  3. Heat 1 tablespoon of olive oil in a large cast-iron skillet over medium-high heat. Add the potatoes in a single layer and cook for 10-12 minutes, stirring occasionally, until browned and tender. Remove potatoes from the skillet and set aside.
  4. Add the remaining 1 tablespoon of olive oil to the skillet. Add the steak cubes in a single layer, being careful not to overcrowd the pan. Sear for 2-3 minutes per side until browned. Remove steak from the skillet and set aside with the potatoes.
  5. Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic, rosemary, and thyme. Cook for 1 minute until fragrant.
  6. Return the potatoes and steak bites to the skillet. Toss to coat everything in the garlic herb butter. Cook for another 2-3 minutes until the steak is cooked to your desired doneness and the potatoes are heated through.
  7. Serve immediately.

Notes

  • For extra crispy potatoes, ensure they are dry before tossing with oil and seasoning.
  • You can substitute other herbs like parsley or chives.
  • Adjust cooking time for steak based on your preferred level of doneness.
