  • 2 medium zucchini
  • 1 large egg, lightly beaten
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Pinch of salt
  • Pinch of black pepper
  • 1/4 cup low-sugar pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • Optional: Mini pepperoni slices

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and trim the ends of the zucchini. Slice the zucchini into rounds about 1/4 to 3/8 inch thick. You are making thick slices, not grating them.
  3. Place the zucchini slices on a layer of paper towels. Sprinkle generously with salt and let them sit for 10 minutes to draw out moisture. Pat them very dry with more paper towels. This step is key for a crispy base.
  4. In a medium bowl, combine the beaten egg, almond flour, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix well.
  5. Dip each dry zucchini slice into the mixture, ensuring both sides are lightly coated.
  6. Place the coated slices on the prepared baking sheet. Bake for 10 minutes until they start to firm up.
  7. Remove the baking sheet from the oven. Top each zucchini slice with a small amount of pizza sauce, followed by mozzarella cheese, and any optional toppings like pepperoni.
  8. Return the bites to the oven and bake for another 5 to 8 minutes, or until the cheese is melted and bubbly.

  • For an Air Fryer Zucchini Bites method, cook at 380°F (195°C) for 8 minutes before topping, then cook for an additional 3-4 minutes after adding toppings.
