You can bake bakery-style artisan bread at home using this simple, no knead recipe. This loaf develops a beautiful golden crust and a soft, airy interior, enhanced with savory Parmesan and aromatic herbs.

  • 1 1/2 teaspoons salt
  • 1/4 teaspoon instant yeast
  • 1 1/2 cups lukewarm water
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons mixed dried herbs (like rosemary and thyme)

Instructions

  1. In a large bowl, whisk together the flour, salt, and instant yeast.
  2. Stir in the lukewarm water until just combined. The dough will be shaggy and sticky; do not knead it.
  3. Cover the bowl with plastic wrap and let the dough rest at room temperature for 12 to 18 hours. This long fermentation develops the flavor.
  4. After the long rest, gently fold the dough onto a lightly floured surface. Sprinkle the Parmesan cheese and dried herbs over the dough. Gently fold the dough over itself a few times to incorporate the cheese and herbs without overworking it.
  5. Shape the dough into a rough ball. Cover it loosely with plastic wrap or a clean kitchen towel and let it rest for 30 minutes.
  6. About 20 minutes before the second rest is complete, place a 5 to 6-quart Dutch oven, with the lid on, into your oven. Preheat the oven to 450°F (232°C).
  7. Carefully remove the hot Dutch oven from the oven. Gently place the dough ball into the hot pot. Cover the pot with the lid.
  8. Bake covered for 30 minutes. This trapped steam creates the signature crusty bread at home.
  9. Remove the lid and continue baking for another 15 to 20 minutes, or until the crust is deep golden brown.
  10. Carefully remove the loaf from the Dutch oven and let it cool completely on a wire rack before slicing.

  • For the best results in achieving a chewy bread interior, allow the dough to cool for at least one hour before cutting into the loaf.
